Self-hosting email
I've had good success with Modoboa. It's the only one I've found that has both a GUI and decent LDAP integration. There are a few containerized versions out there, though you should definitely be sure to update modoboa after deployment if you use them: https://github.com/modoboa/modoboa

Unorthodox Things to Self Host?
I'm telling you that you could setup a host in my cluster and it will work though (would need to setup a mail proxy though as I currently operate). I operate from centurylink (Although there's new fiber being run in my neighborhood and hot damn am I so happy, so my provider might change). And I operate mailcow (https://mailcow.email/).

Opinions on setting up email that integrates well with nextcloud?
For a self-hosted option you could take a look at https://mailcow.email. I think I saw some way to connect it with NextCloud, but I donât use it, so not sure.

How to create my own SMTP Server with my own domain?
Not sure why anyone hasnât mentioned MailCow yet⊠I would advise against self-hosting your mail server for several reasons (I do it) but if you are going to regardless; I think this is you best option. Only took me ~45 mins start to finish.

Poste.io â Complete Mail Server
I evaluated it once, and ended up using https://mailcow.email
I think the fact that it includes SoGO with Cal/CardDAV and active sync was the main reason, poste.io doesnât seem to provide a solution for contacts and calendars.
Iâm still very happy with mailcow. And they include all features in the free version.
