Self-hosting email
I've had good success with Modoboa. It's the only one I've found that has both a GUI and decent LDAP integration. There are a few containerized versions out there, though you should definitely be sure to update modoboa after deployment if you use them: https://github.com/modoboa/modoboa

Mailu. Itโs a docker image that has the whole email system pretty much all done for you. If you donโt know docker, learn it itโs well worth it.

Modern full-featured mail server for low-maintenance self-hosted email
Looks good, but since it's a young project I would suggest to anyone interested to consider Mailu [1], which is a mature project and looks easier to configure.

The scope isn't revolutionary - I've used https://mailu.io/ for years for a few 10s of users, and I really like it. I've heard similar good stories from Mailcow users.
On a quick skim I couldn't tell what was new relative to these older compose-based solutions but (as co-author of similar solution 10-15 years ago) I'm interested to know!

I've used https://mailu.io. It works well, but your biggest problem is going to be getting over the spam filter hurdles of the email giants of the world. Even if everything is properly configured (including dkim / spf / whatever else they've added) your messages will get plopped in the spam folder.

Self-hosting in 2023: Nextcloud on Linode, or _?_ on _?_?
As ever with these discussions, I host my own email on a Hetzner VM with https://mailu.io/ and there was no special setup or precaution required to ensure delivery both ways.
Still - if you self-host just assume at some point it will go down and you may have to deal with a backup restore before you can receive any more email. If that gets in the way of your life, you may want to reconsider :)

is Poste.io the best today one easy to set up and use Mail Server solution?
I have come to use Mailu as Mailcow seems overkill for my needs(one mailbox and couple of aliases + webui for management and webmail).

I like MailU (https://mailu.io). Quickly deployed with Docker too.
