Auto archive messages hitting 90-days? (looking for ways to bypass new license)
As for the use case op hopes for -- the matterbridge project might be relevant. Ideally, you could migrate the history to a Mattermost server and set up the bridge. The Mattermost server will log all future communications automatically. The benefit of this over a pure archive (HTML or PDF type) is that the archive itself is a full-featured workspace ready to be used standalone at any time, should any issues arise from Slack.

Well the good thing about nyxt is it's super extensible so a PoC doesn't require proper "reception" on their side.
Do you maybe have a gateway/bridge to a libre network such as IRC/XMPP/Matrix? I find HTMX pretty interesting but i wouldn't touch discord with a 10-foot pole, if only because my limited computing resources won't allow for such a resource-hungry app to run in the background.
It seems like matterbridge supports discord backend but i don't have a discord account to try it with. If you're not willing to host matterbridge, i'm already hosting one and i would just need credentials to try and connect it to Discord. If you're willing to give that a try, feel free to mail me at my username @ thunix.net.

OpenSource Client for MS Teams?
I was about to ask, "Can you explain a bit more? Matterbridge, from what I understand, bridges an existing Mattermost install with other chat services." , and then I read the About on the page I linked, and yep, it clearly says there, at the end, _Mattermost not needed_. Another page lists some config examples which clearly show a connection between Discord and Gitter (https://github.com/42wim/matterbridge/wiki/How-to-create-your-config). I suggested installing Mattermost because it is the only self-hostable option that I would recommend installing (some of the others shown are resource-hungry, or just complicated... but that's just me). Thus, using the mobile client for Mattermost would allow OP to have a mobile solution. Since it can work with Telegram and WhatsApp too, if they have those existing apps then I guess, once more, Mattermost isn't needed.

An actually private messaging self hosted server
I am trying to find something similar to discord that is actually private. Matrix phones home with a nasty amount of info: https://github.com/libremonde-org/paper-research-privacy-matrix.org/tree/master/part1, Snikket seems like a decent alternative, i just havent audited it for security purposes. Any suggestions? All im trying to maintain is the multiple-channels aspect of Discord, voice/video are optional, but preferred if possible

XMPP Group Chat & Introduction
I present to you a MUC I've created on the XMPP (also informally known as Jabber) network. I've put some thought into which network would be best fit and decided that, while IRC is an excellent way to chat, there is an apparent lack of mobile support and perhaps lacks the ability to choose a server of your choice. Furthermore, I've concluded for many years that Matrix isn't a good choice for multiple concerning reasons, the most impactful being the Matrix Foundation itself receiving large amounts of metadata and being overly centralized over the entirety of the network. Matrix also utilizes CloudFlare (a popular CDN service) which, according to W3Techs, provides services for 19.2% of all websites. I don't believe CloudFlare is a bad actor but they certainly can MITM any websites utilizing their free tier plan. One can easily check if a website is using the free tier SSL certificate by checking here. You can see that in the "subject" area, it shows the SSL domain name as sni.cloudflaressl.com. CloudFlare's free SSL operates by encrypting only the data sent from you to the CDN, leaving the data that is sent from the CDN back to Matrix.org unencrypted. This isn't necessarily problematic for the entirety of the network, however, it shows the Matrix Foundation has an apparent lack of privacy/security practices while advertising their project as a privacy-oriented chat solution. I won't ramble on too much about Matrix's suspected privacy issues, instead, I'll leave you these two write-ups to read for yourself, here and here.

Why do people still recommend Matrix.
I get that it has some nice features and that it is open source and self-hostable, but i think it has some serious problems too. Mostly privacy related issues, but also true decentralization issues. The matrix ecosystem isn't contained in one server program (home server and identity server are seperate, for example) and thus leads to centralization(because of default values being set to matrix.org) of whatever component gets neglected by self hosters.
