New user of jellyfin: how do I get subtitles to load automatically
I think they will only be enabled automatically if the subtitle track you want has the “Forced” flag on it within your video file. You can use MKVToolnix to do this on individual files or you can use jmkvpropedit to batch edit files.

Jellyfin downmix control
I forgot to mention there’s also JMkvpropedit which makes it easier to batch edit. I’ve used it for anime before and it works great.
- If i have a movie and i want to have a subtitle track selected by default can i do that somehow?

Using MKVToolNix in the CLI, is it possible to remove audio tracks and subtitles in bulk?
jmkvpropedit is a lovely tool that i've been using for years to do this.

hey, every single piece of new media I add to my server shows this. how can I fix this?
If you're ripping it yourself then your software seems to create bad metadata for your audio. You can try batch editing the audio tracks using JMKVproperedit

Help with automation
mkvpropedit can do this, although the command-line options aren't as convenient as mkvmerge, so I'd recommend JMkvpropedit (a GUI built on top of mkvpropedit). Should just be a case of dragging/dropping your files in then adjusting the options.

My idea how to improve finding a correct subtitle offset
It is possible to largely avoid this problem of having to sync subtitles when you go to watch something by using software that can automatically find the offset. I made one a while back that embeds the offset and subtitles into the MKV file: https://github.com/iwalton3/media-scripts/tree/master/subtitle-audio-transfer

Does Jellyfin stream all audio tracks?
If you want to get rid of tracks you’ll never use, you can use this script: https://github.com/iwalton3/media-scripts/tree/master/media-discard

As someone who's started collecting anime, a real limitation of PMS has reared its head
My current approach is I use this script to set all my signs & subs tracks to forced, then set my user preferences accordingly. https://github.com/iwalton3/media-scripts/tree/master/force-signs

How to properly tag "forced" subs on anime with dual audio?
But I can give you the link to the script tho: https://github.com/iwalton3/media-scripts
