It really is hard to leave Gmail when all of your data has been conveniently stored therein. This is one of Google's retention strategies and it is indeed brilliant.
That said, there's a vast number of self-hosted alternatives like Stalwart Mail (email) [1], Immich (images) [2], NextCloud (Google Docs) [3], etc.

Last year we added CLIP-based image search to https://immich.app/ and even though I have a pretty good understanding of how it works, it still blows my mind damn near every day. It's the closest thing to magic I've ever seen.

Here's an example where an MIT-licensed project switched to APGL recently without needing to contact contributors[0].
Interestingly, the MIT license explicitly names and allows sublicensing, but the 2-BSD and 0-BSD do not call it out explicitly.
tldrlegal[1] seems to think 0-BSD allows sublicensing, but doesn't mention it on the page for 2-BSD[2].

If you track Personally Identifable Information, such as IP addresses or emails, yes. If you track completely anonymously, then no. Of course, this limits what kind of anylses you can do (e.g. cohort-based analyses will be impossible). But I would also wager that you don't really need that, especially if you're a small startup.
