You can also try https://github.com/inflex/ideviceunback but you'll have to compile it on your own, preferably in Linux.

Extract photos from iPhone back up on windows 10.
You should be able to browse iTunes backups using 3utools. It's free. Other than that, https://github.com/inflex/ideviceunback - this should be able to "convert" those backups into human readable form.

Cannot Get iPod To Connect
According to the wiki page, usbmuxd should start as soon as I plug in my device, but that doesn't seem to happen. I checked and found the udev rule that should govern that at /usr/lib/udev/rules.d/39-usbmuxd.rules and it matches the rules file provided on the usbmuxd git repo. Even when I try to start usbmuxd manually my device just doesn't seem to show up, though running it in the foreground does reveal that it sees that something gets plugged in. It just doesn't seem to connect the device properly or anything. My main litmus test for if it's connected well is to run ideviceinfo. I always just get back that there is no device connected.

"Sorry, music synchronization with newer devices is currently not supported but if you are a keen developer why not contribute a new service implementation for the ATC Service?"
The page is broken. If you look in the HTML source, it is trying to include the homepage URL as a script on line 1506:
