Where to get Shikra or Bus pirate in Europe?
I advice for a HydraBus wiki and against a Bus Pirate since the latter doesn't have much support these days.

Can I use any Mikrotik SFP device as a FTTH modem?
Find a ONT SFP unit that will work with your ISP. (Fs.com has a few options, this is another source https://github.com/Anime4000/RTL960x)

How do I know which configurations/files belongs to my ISP provider in an ONT modem and router which runs OpenWRT?
You'll have to figure out the ONT credentials (serial no., password etc.). Should not be too difficult. The device may have a web-ui or equivalent cli commands. Once you get them, you can ditch the device and buy standalone hardware which can run openwrt. A good option is ubiquiti er-x sfp. You can install an ONT sfp modem in it and put it in bridge mode. Openwrt will handle the rest. You may have to whitelist the MAC with the ISP or spoof it. This repo has useful information on the ONT SFP modules that you can buy: https://github.com/Anime4000/RTL960x
