My problem is that, when using jmdns (a JVM implementation for MDNS), there don't seem to be any issues: the service is discovered by my android client. However, when I try to use https://github.com/hashicorp/mdns, the android client isn't able to find it.

I haven’t looked at the code, but you can mdns for discovery on a LAN https://github.com/hashicorp/mdns so that you don’t have to mess with IP addresses.
