Matter 1.2 Arrives with Nine New Device Types and Improvements Across the Board
You don’t need to use HomeKit for this to work, but you will need https://github.com/oznu/homebridge-gsh. (Caveat: I haven’t tried this myself since I use HomeKit and Alexa devices.)

Google Home speakers to control HomeKit (Instead of Apple HomePod)
I have no idea about the Google Home Mini, but I managed to add my Nest Mini to HomeKit using the Enomek. You can try it as it simplifies the whole homebridge process. Also, Look for the homebridge-gsh plugin on github.

Is it possible to integrate homebridge devices directly to HA?
I currently use homebridge-gsh as a way to have my Google Home speakers control my devices strictly through Homebridge. Is there a similar plugin that I could use the same way with HA where commands from Google Home interact with HA vs with each device's own cloud provider?

Best way to add and control my new LG AC’s to HomeKit?
I've been using the ThinQ plugin for Homebridge for a couple of months. It can do the basic stuff: turn the AC on and off, show the temperature, adjust the fan speed, and change modes by adding buttons. I suggest you try the plugin first to see if its functions and responsiveness is sufficient for you.

Is there a true advantage in getting a HomeKit router?
If you're not averse to using Homebridge, it looks like you can bring the Thinq humidifier in with this plugin - https://github.com/nVuln/homebridge-lg-thinq
