The TL;DR: Authentication for devices and services are via the UI only (to deal with OAuth2, refresh tokens, auto-updating IPs via mDNS). Automations/scripts/scenes are both YAML or UI.

Alternatives to Hubitat and Home Assistant
If you still want an operating system outside of hassio you can install debian (its the only one supported) and then use the supervised installer https://github.com/home-assistant/supervised-installer

I have $1000 to get started with home automation. Where would you begin? Serious.
For me: install Debian on an old laptop (or buy a second hand one). Get Docker-CE up and running and then use the Home Assistant supervised script to get HA installed.

I have finally got around to this. Take a snapshot and download it somewhere. Wipe and install Debian Buster. This can be put on a USB key: Debian Buster minimal installer. Install Docker CE and jq. Run the Supervised installer script. Wait for a while, run this and wait for the box to cool down:
