How should I manage Identity Management/openLDAP while maintaining password encryption?
With such a setup no entity has to ever read the password hashes from the LDAP database. You should even make attribute userPassword write-only and only grant auth access to it for anonymous (see Æ-DIR ACL for active personal user accounts).

Resources for LDAP setup?
But in opposite to other LDAP servers OpenLDAP also supports multiple inheritance of STRUCTURAL object classes (others like 389-DS do not). I'm using this in my Æ-DIR to define object class aeUser based on inetOrgPerson and account for personal user accounts.
