Stars - the number of stars that a project has on GitHub. Growth - month over month growth in stars.
Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

I’ve used the Gitit Wiki. Database is plaintext markdown files under git source control. Renders with pandoc so you get a really good dialect of markdown. The look and feel is a little dated but 8/10 highly recommend.
Is there an open source and deployable collaborative markdown editor with version control (maybe git?)

Instead of SQLite I would prefer if you stored the snippets in a git repo like Gollum or Gitit.

I use my own forked version of gitit (dark, full-width theme, with automated toc and some other tweaks) for the last 5 years or so which looks and functions quite similarly. I handled web bookmarking/clipping with xclip (rich text clipboard) + pandoc html-to-markdown.

It outputs to this structure, which is possible to access via the API for automation where needed. For the linked docs page, I then use that data in a view to list out the content.

Take a look at Bookstack. It lets you organize by bookshelf, book, chapter and page. I am currently using it as my main note taking app. It is a locally run web-based app, which I keep pinned to my tab bar in Firefox. I made a video on how to install it here.

Bookstack - nice looking and very good structure but created by one person and needs a separate database. Not easy to install but a Docker version is available. Most modern of the three and great diagram support built in.

I use Bookstack. It's clean, easy to install, and easy to use. Their documentation for backups and restores is also very straightforward.

Unless I'm missing something very obvious, the source repository https://github.com/streetwriters/notesnook only includes the client apps and not the server, and the parent organization "streetwriters" doesn't seem to have any other repositories for the server. How are you supposed to run your own instance without that?
There's also a lot of marketing-speak in the repository documentation and little to no documentation on how to actually deploy it. Overall this leaves a pretty bad taste in my mouth.
Compare this for example to Bookstack, which gets right to the point for how to install and deploy, with no marketing nonsense. https://github.com/BookStackApp/BookStack
