I did the exact same thing for a game I'm working on. Have a look at this file here and run a search for "credits". You'll see both where I added it to the menu and how I defined the screen itself.

Is there really now way to better organize audio files ? like sub-folder or else ?
You can automate some of it. Have a look at this code I wrote for a game. You can see how I specified file prefix and suffixes for the different types of audio files.
