Same [1]. Zoom being outsourced to the implementing platform is one major pain-point. That example from us has grown in size.
We are clearly using the wrong tool for a diagram of this complexity, but the practicality of seeing commit changes in the diff, what property was changed by whom and instantly having the visual feedback in the Pull Request is just way too useful to use a "proper" tool.

OpenProject. It has a lot of features and they also give you professional support and features optionally if you need that. It has probably all the stuff that Jira has and has some plugins and integrations.

Selfhosted (open source) Software for event planning / congress planing
As for the planning I'd probably use a project management tool. Usually I'm recommending simpler ones like Vikunja but for whole congresses I'd rather use something 'bigger' like OpenProject (installation doc and they are also on Reddit).

Project Management
While I'd be happy to find something already in Nextcloud it seems that they're leaning more into teaming with existing FOSS/Selfhosted projects--like my project management software of choice, OpenProject (https://www.openproject.org/). In fact, there's even an "integration" between the two tools, but OpenProject is far from an app and does require it's own server as well--not sure if that's a dealbreaker for you but it's the approach I would, or did, take.

What to use with Docker?
I guess most people already recommended plex wrapperr, tautulli, and plex-meta-manager. If you want to host your own budget software, there is firefly iii. Calibre with calibre-web is nice for organizing e-books, imo. I also like OpenProject for organizing projects, like stuff from work or renovating a room.

Selfhosted Jira Alternative
Use OpenProject if you need a full-fledged alternative with many features and integrations and use Vikunja or FocalBoard if you mainly need the Kanban board.
