- How do I download and save macOS Monterey Update?

Meet my 100$ Dell Latitude E5520 running 3 diffrent Operating Systems for no reason whatsoever :)
Well you first need to understand the Boot Processes, Opencore is only a bootloader and can only track logs of Opencore, MacOS on the other side ( The installer ) shows the logs but they get deleted as soon as you reboot. The only way to "save" those logs is by taking a picture of them with your phone, now if you get a Kernel panic at the end of the verbose there will be a "Backtrace" wich is Apple's way of saying: „This is the problem that caused this“, If you are able to boot into the MacOS installer and can partion your disks and than finally installing MacOS, Then the installation logs are within the MacOS Installer also getting deleted at reboot. And if you don't have any verbose while booting the MacOS installer than you might have to try gibmacos, either way to have any logs or verbose output make sure to have -v (verbose) in your bootargs under NVRAM.

IMPOSSIBLE TO DOWNLOAD OSX INSTALLERS
or use https://github.com/corpnewt/gibMacOS to download from apple servers
-
How many ISOs you got? I need to download more obsure ones too
You can get macOS images from apple if you run macOS or use tools such as gibmacos. You may need to convert or make some other changes for those to be used afterward.

NR200P Max (with a little apple sauce added to the mix…)
Otherwise look for help on YouTube for simple guides or in the Hackintosh subreddit on how to create a USB installer with macOS and the proper EFI containing OpenCore on it, as well the proper UEFI settings for your mainboard. If you don't have access to a real Mac to download macOS, you can always resort to Google or https://github.com/corpnewt/gibMacOS to create your installer in Windows (execute the script as admin).

why my opencore boot didnt recognize on dualboot windows
To get macOS, if you can't change your model identifier to get the version of macOS to download, try gibMacOS. It worked well for me under macOS (haven't tried it on Windows yet) when I was making a 16-on-1 USB Installer.

A few Bootloader questions - looking for luks+btrfs support but also theming
Are there any other bootloaders I should be considering? My understanding was that LILO and BURG have essentially been abandoned so even if I were willing to rely on an abandoned project for something as important as the bootloader (I'm not btw) then it probably would not work with LUKS/Btrfs. While doing my initial research, I did come across Clover but I know even less about that than I do about Systemdboot and Refined. My initial impressions is that it seems very customizable theming-wise but it feels like maybe not too many people use it / I'd have a hard time finding help and that's IF it even supports LUKS/Btrfs.

Struggling to get GTX 1080 Ti to work on Sierra

why my opencore boot didnt recognize on dualboot windows
We are using the Dids version for awhile now as the CloverHackyColor version was giving us GUI issues (it's fixed now in past updstes) on the bootloader screen. I could use an older build but 5122 was needed for a clean install. If I attached my SSD to an enclosure and installed it from an iMac, then the old version is fine to boost but we had to watch out for updates as it could cause a panic.

Projects for Old Versions of OS X
Modern Hackintoshes have moved to using OpenCore as the bootloader, which is open source: https://github.com/acidanthera/OpenCorePkg
The older standard was Clover, also open source: https://github.com/CloverHackyColor/CloverBootloader

Installed BigSur perfectly. Everything is working just perfect, but the new curved edges introduced from BigSur appears a bit glitchy. How to fix this? Display: Dell E19095 1440x900. Gpu: NVIDIA GT710
I use the same guide/tutorial posted over in the subs over the years. The only thing I did different is to switch from CloverHackyColorCloverHackyColor (which took over from SourceForge repo) to DiddsDids. Now my Clover HackBook is faster than an OpenCore Desktop.

I can't download Clover
Not sure if this is the best source. My recommendation: https://github.com/CloverHackyColor/CloverBootloader/releases
