Well you first need to understand the Boot Processes, Opencore is only a bootloader and can only track logs of Opencore, MacOS on the other side ( The installer ) shows the logs but they get deleted as soon as you reboot. The only way to "save" those logs is by taking a picture of them with your phone, now if you get a Kernel panic at the end of the verbose there will be a "Backtrace" wich is Apple's way of saying: „This is the problem that caused this“, If you are able to boot into the MacOS installer and can partion your disks and than finally installing MacOS, Then the installation logs are within the MacOS Installer also getting deleted at reboot. And if you don't have any verbose while booting the MacOS installer than you might have to try gibmacos, either way to have any logs or verbose output make sure to have -v (verbose) in your bootargs under NVRAM.

How many ISOs you got? I need to download more obsure ones too
You can get macOS images from apple if you run macOS or use tools such as gibmacos. You may need to convert or make some other changes for those to be used afterward.

1 . Use https://github.com/corpnewt/gibMacOS to create a usb ( first install catalina later you can update to big sur via mac)

Otherwise look for help on YouTube for simple guides or in the Hackintosh subreddit on how to create a USB installer with macOS and the proper EFI containing OpenCore on it, as well the proper UEFI settings for your mainboard. If you don't have access to a real Mac to download macOS, you can always resort to Google or https://github.com/corpnewt/gibMacOS to create your installer in Windows (execute the script as admin).

To get macOS, if you can't change your model identifier to get the version of macOS to download, try gibMacOS. It worked well for me under macOS (haven't tried it on Windows yet) when I was making a 16-on-1 USB Installer.
