Some of the providers I personally use are: Protonmail, Mailbox.org, AnonAddy, and SimpleLogin.

It depends on the service. Some will have your email out in the open, others will only have it revealed after a leak. If you want to defend yourself against these types of attacks, try AnonAddyor SimpleLogin.

Additional addresses can't be tied back to your original address. To fight spam more effectively you can take a look at AnonAddy or SimpleLogin as u/7pH7 suggested.
