Dice So Nice! - Makes rolling spawn 3D dice on the screen. Lots of customization, though not necessary to make it work well. If there are performance issues, I found turning off shadows helped.

Cyberpunk Red Dice Set
To create this dice set, in addition to the Dice so Nice! module, needed the Nice More Dice addon to edit the files and the faces and it is precisely in its folder that all the configuration will be done.

[PF2e] Considering moving our game to Foundry from R20, but our GM isn't great with technology
If you do it this way, Foundry might not help much. It can certainly be used in this way, but it is capable of so much more. On the plus side, you can ease into those additional features as you (and her) gain more familiarity with it. I highly recommend using the built in character sheets and passing some of the automation off to Foundry. Even if you don't, Foundry may still have some benefits over Roll20. The 3d dice (using the Dice So Nice! module) are much better and more customizable, which helps bring a more table like experience. The journal capabilities are better, and improving in the next version (10), so if she shares handouts or likes to keep her notes in the VTT, this can be a significant QoL improvement. Combat management is easier, with the turn tracker keeping track of elapsed rounds, which allows effects to use that info for determining expiration.

You can use TokenMagic to add depth to the scene by adding shadows to floating characters. Here's an example of how that could look (apologies as I don't have an appropriate map for this): https://i.imgur.com/gOVJRnQ.png

Is there a way to make tokens appear differently to different players?
There's also the Token Magic FX module which is definitely more advanced, but if you're comfortable editing the guts of a macro, you could write some that would shift between images with a little more fan fare.
