I am having a hard time reading and understanding the ratios on the factorio cheat sheet. Red science makes sense, I need to make 1 gear/s to supply 10 red science assemblers. But beyond that I don't understand.

You might be interested in checking out factoriolab or kirkmcdonald. Both tools work great for planning the amount of machines needed to make a specific factory.

External tools to design production chains?
There's a production chain calculator called FactorioLab which already supports several games beyond just Factorio, and had some discussion about supporting Captain of Industry, but doesn't yet. I would guess there hasn't been a lot of work into it yet because CoI is still relatively early, and has had some significant recipe changes.

Foreman 2. It makes flow diagrams which also calculate everything for you. By far the easiest way to set up massive production chains in large modpacks.
- I don't see the maths behind using Crystal Slurry to Mineral Sludge early.
- Finally, after 20 hours of work, I present the flowchart for Pyanodon Space Science! (Low quality because reddit wouldn't let me upload the full png)

If you get into mods, esspecially ones with loops, something like YAFC or Foreman 2 is much better.

And for large circular recipe chains I use Foreman, which handles those significantly better than helmod/FP, because there is much more calculation power available outside of the limited game engine.
You could add outside planners too, especially YAFC and Foreman are outstanding.

Foreman 2.0 https://github.com/DanielKote/Foreman2 is robust Factorio diagramming app. It's capable of creating rather large diagrams, such as this [1] one of an entire Seablock factory.
Another one I like to use for quick diagramming is Factorio Lab [2], which is a web app.
