If you want to do WiFi, the ESP8266 or ESP32 devices are what you want. You can get them for ~$8, but you will have to program them yourself. See also https://esphome.io/ for a nice framework. WiFi is pretty heavy on the batteries, so you will need to recharge it often.

I'd also give the PoE ESPs a look as well. As I mentioned, ESPHome is really useful for making devices yourself, e.g. you could easily add a bunch of wired sensors using both of those, whether that's door sensors/air quality/temperature/etc etc, there's a huge amount you can do. And the great thing about ESPHome is you know exactly what is running on the device.

What you're looking at is a graph showing the temperature (green) and CO2 concentration (yellow) in my home-made fermentation box. I've got an mh-z19b CO2 sensor hooked up to an esp8266 Wemos D1 mini configured with esphome, I then use a combination of home assistant and grafana to view the data. What you're seeing is a view from grafana. The temperature sensor used is not the one from mh-z19b (which only has a precision of 1C) but a BMP280 hooked up to the same ESP.

I use this https://www.home-assistant.io/ or another https://www.openhab.org/ and a cheap raspberry pi zero. It can run 24/7. And maybe some "hacking" on your devices if not supported aka listed.

You are trying to package up something like Openhub (https://www.openhab.org/). Take a look there and see how much is the hardware that supports their environment. I would also not try to reinvent the wheel, as there are plenty of environments out there from Control4 to OpenHub.
