If you're still using standard DNS and standard servers, that might be a problem. To work around that, you can use multiple encrypted DNS-over-HTTPS connections to non-corporate anti-censorship servers and they can't do shit.

Only things I have personally stuck with outside of WireGuard are CAKE for traffic control (eliminating bufferbloat etc); and replacing dnsmasq with dnscrypt-proxy for adblocking and encrypted upstream DNS lookups.

Don't pay youtube anything, block ads with ublock origin (chrome, firefox), use sponsorblock (chrome, firefox) to automatically skip sponsored segments. Use youtube vanced on android or the alternative on ios. If you are technically inclined and want to block ads network wide, use pi-hole.

Once you have the equipment, it really doesn't take long. https://pi-hole.net/ is a good resource for installation, which is just a few minutes. Then configure for your network. Your technical expertise will probably determine the time, but there's a lot of guides out there to help you setup. Good luck!

Inside your own network, yes, you can keep track of the exact site your devices access, but it's not [yet] common. This would typically be done on a router, or a firewall. Many larger businesses will do just this. As for your common home router, MOST (if not all?) home routers DO NOT keep track of the exact site you or anyone else was on. Even higher end routers like Ubiquiti's UDMP only categorize traffic, but don't drill-down to specifics. This isn't that it can't be done, running a Pi-hole on your network will do EXACTLY what your describing, and more.
