Can I rely on Cryptomator and be sure there are no backdoors or other vulnerabilities?
Not true for iOS. Just looked at the iOS repo and it is most definitely not open source. It even says in the repo it is open core, not open source. https://github.com/cryptomator/cryptomator-ios Making the source code open source is independent from Apple. They could do that today if they wanted to. Having reproducible iOS builds depends on Apple.

Bouncer opensource alternative?
Such apps exist. Essentially they require a license key before accesing. For example, Cryptomator (github) and Threema (github) .

Ah, I see what you're asking. They don't have any free trial features, especially for the Android app. You can try to compile the apk yourself though. I don't believe you need the license key if you compile the code. https://github.com/cryptomator/android

It sounds like you are mixing some terms up. Open Source Software does not mean free of charge. The source code is open, modifiable (and usually instructions are given to build it). However, there are some licenses for this software. Cryptomator's Android code is here: https://github.com/cryptomator/android and the license, what to do with this software is here (You obviously can't just stick a different logo on top and sell it as your product).
