To get Chia working after this official soft fork you have to get Chia Client Chia Blockchain 1.7.0 upwards to Chia Blockchain 1.8.0

If everything was sent to one address, you can check said address on a blockchain explorer (like https://xchscan.com/ or https://www.chiaexplorer.com) to make sure said address still has the XCH.

No, once you connect a wallet to the internet (such as syncing) it is no longer a cold wallet. You can view receive addresses on sites like https://www.chiaexplorer.com/ or https://xchscan.com/ which you would use to check the value of your cold wallet.

https://www.chiaexplorer.com/ Chia network size is 30 EiB, that's less than a year after launch. While storing 400 PiB every year will be a challenge, if the incentives are aligned and the network grows the economics of scale should work out.
