It will be possible to switch to security-express channel via the updater in future builds, we simply didn't have enough time to implement that yet. It is being tracked at https://gitlab.com/CalyxOS/calyxos/-/issues/1554

We're looking into ways to maintain stability while also not delaying security updates. See this GitLab issue for the existing discussion. We'll post an update once we have something implemented.

There's no way to do a direct image. You can try using seedvault to back up individual pieces of data though: https://github.com/seedvault-app/seedvault

There is Seedvault which allows to backup to a USB drive or cloud with end to end encryption.
