Activity is a relative number indicating how actively a project is being developed. Recent commits have higher weight than older ones.
For example, an activity of 9.0 indicates that a project is amongst the top 10% of the most actively developed projects that we are tracking.

Procedurally generated rocks in my software "Proc-rock"
My best recommendation I could give you is to simply create things. Start small, for example create a small program in the field you're interested in and then go from there. You can check this for ideas on what to create. There's a lot of resources in there.

Do i need to download a GUI
You should do whatever the person in the video does. You can make a Tic Tac Toe game with just text. (I have such a program here in Python).
