Multiple screens with different resolutions?
autorandr worked great for me for hot plugging when I would frequently use my laptop with two external monitors.
-
update xrandr automatically when I unplug a monitor
Autorandr does run in the background as it is a daemon. For systemd integration see https://github.com/phillipberndt/autorandr/blob/master/contrib/systemd/autorandr.service
I achieve this with autorandr. Never tried to implement inside (any) window manager.

dual monitor issue with both XORG and wayland; please help

- How to only display on external (internal can be inactive) while HDMI cable is plugged in, and switch back to internal when HDMI cable is unplugged?

Automatically detect external displays and apply config to them
Check autorand. You can save profiles and automatically load them if an hdmi connection/disconnection is detected.
-
How do you handle variable monitor configurations?
First setup all the display configurations, ignoring xmobar. Using something like https://github.com/phillipberndt/autorandr and https://christian.amsuess.com/tools/arandr/ make it easy. Now all you have to do is somehow invoke autorandr --change every time there's a connection or disconnection event.

From macOS to Arch Linux
If I may suggest, take a look at autorandr [1], it saves your monitor configuration and automatically enables it when a set of monitor is detected. It's a small thing, but it improves the experience and will replace your home alias.

General question about only using i3 without Desktop Environment.
I personally use autorandr and set the wallpaper using feh within each config (in the postswitch script DO NOT SET IT IN i3). You can read more about getting it configured here.

MacOS Audio API
Thanks for the comment. I checked out Rogue Amoeba's SoundSource, and BackgroundMusic. I think they're using some sort of virtual audio device or something to intercept applications' audio data, control each application's volume, and then send it to the speakers (or another output device).

App to automatically pause Spotify/Apple Music when YouTube video starts playing
Tried https://github.com/kyleneideck/BackgroundMusic before. But didn't work for me.
