We've been using Tekton for little over a year now. It has been a great building block to build our CI system on. We have invested quite significantly into tailoring it to our needs. One of the examples that came out of that is Tekline.

We're using Tekton together with Kustomize. We version our pipelines and use a delegate pipeline setup as shown here: https://github.com/joyrex2001/tekline. This allows us to define the pipelines as part of our microservice repository. (more info in th repo)
