Ice - open source bar manager for macOS
For about 4 years now, I've used Dozer [0] to hide and organize menu items. It's been mature and stable the whole time. It had many of the features still on the development roadmap for Ice. You can drag-and-drop icons, hide and reveal with clicks or keyboards, and have two levels of hidability.

Popular Mac app 'Bartender' acquired by new unknown developer
yeah, no reason these days to use proprietary solutions for small problems. I'll check out Ice, it seems much more modern (and maintained) than Dozer: https://github.com/Mortennn/Dozer
I just wish somebody would create an open source alternative to Rouge Amoeba's Loopback!

macOS Bartender Auto-Update Signed by Unknown New Owner
Sadly it's as good as not functional (it doesn't even begin to work on my Mac). I used to use https://github.com/Mortennn/Dozer and that also started misbehaving (and now the shortcut won't work). I used hidden's fork as well which also doesn't work. All of these apps are abandoned.

Dozer (free - open source), HiddenBar (free), free alternatives to bartender, however, only does 1 thing and that's hiding the icons, not adding an extra menu, nothing just icons here, icons gone.
