I used this https://github.com/Szaki/XiaomiADBFastbootTools To get rid of most of them + bloatware. There are dedicated lists out there on what's safe to remove/ safe to disable that can be used. Apart from that you can disable some of the ads over app settings + general settings. You should get a tutorial on how to do that if you look it up. Setting your dns to adguard also helps, but you should be able to get rid of system app - ads without that (or deinstall the relevant system apps)

Yea, i have Redimi 9C and removed some apps (MSA, MiUi Deamon, YouTube, and some other) using this: https://github.com/Szaki/XiaomiADBFastbootTools. And it works fine.

LineageOS is currently installed on 1.5M Android devices
It might be worth to switch to GrapheneOS if you have Pixel phones: https://grapheneos.org/
It is a more serious project than LineageOS in the sense that they take security very seriously and they take their development more professionally too. There are no disadvantages to using GrapheneOS compared to LineageOS.
