Advice on my custom team I built - Trying to make roles work
If I was going to make a Warpriest tank: well, first I would install Tabletop Tweaks which adds a bunch of extra features to enhance Warpriest. Then I'd probably do a DEX-based Shieldbearer with Armor Master (increases MDB by 1 per Mythic Rank).

How would you set up a 6 custom party to best leverage a Skald's potential?
That's probably because Elemental Barrage is so OP. I started using Tabletop Tweaks in part because it nerfs things like Barrage to bring WotR closer to RAW so I can't just rely on the usual munchkin cheese.

I'm just curious how do tabletop builds differ? In particular with regards to those saucey, spicey, DIPS
You can infer where Owlcat has differed from PnP rules based on what Tabletop Tweaks fixes / nerfs, like bonuses which shouldn't stack or abilities which are overperforming. But it also adds missing features such as "Spears now grant additional damage during a mounted charge" to offset the lack of lances as a separate weapon category.

What in your opinion are some must have mods for wrath?
Tabletop Tweaks - note that there's no going back once you start using it ("Once a game is saved with this mod is enabled it will require this mod to be present to load so do not remove or disable the mod once enabled.")

Aeon Scythe
Fighter's Finesse: "The fighter gains the benefits of the Weapon Finesse feat with all melee weapons that belong to the associated fighter weapon group (even if they cannot normally be used with Weapon Finesse)." Then you take Mythic Weapon Finesse for DEX to damage. Requires fighter 5 for access to Advanced Weapon Training feats; but 2H Fighter doesn't qualify unless you install Tabletop Tweaks.

Stalwart Defender and Hellknight Signifier are doing what they should AFAICT but what they do is a bit boring. Signifier with Armor Master from Tabletop Tweaks becomes a more viable option, though.

Tabeletop Tweaks 1.11.0 Release
With that said if this sounds interesting you can down load the release here and install with Unity mod manager. Updates between breaking patches tend to happen in hours after release so while 1.2 may well be breaking, we do expect a beta and a working beta version should be available VERY shortly after release. Full 1.11.0 change logs are below and a full list of all changes is available here.

By any chance did you get Visual Adjustments instead of Visual Adjustments 2? The latter is working fine for me.

If you're on PC and don't mind using mods Visual Adjustments 2 can do that already. Plus a bunch of other stuff that Owlcat will probably never implement.

Is there a mod for WotR like Kingmaker's Hair unlocker?
I don't think so. There's the github site for the old version of the mod which lists some of its features but I don't think they're all implemented yet.

Questions + Bag of Tricks
Third question: Ugh, in-character outfits are very limited in this game. There is the Visual Adjustments mod that allows you to pick any of the available outfits freely, independent of class or armor type (e.g. you could have your caster run around in what looks like plate) and add/remove other visual effects. The downside is that this does not magically make more armor available. Still, there might be stuff that matches what you want, especially if you look into monster outfits (not sure if incubus outfits, for example, are available as clothing or only as complete body transmogs... would need to check).

(Toy Box) Gestalts help please
When I played with a gestalt character, I got the feeling that that toy box feature was a bit on the buggy side, so I never tried respec. However, if you just want to change the hair style, I think the Visual Adjustment mod can help: https://github.com/BarleyFlour/WrathVisualAdjustmentsMod
