The most typical approach is having a CMS admin panel sit somewhere on the server; everyone with an account uses this. This is a very convenient approach, especially when working with a team. This way, many people can work on different articles simultaneously without worrying about potential conflicts or overwriting stuff. The only con is related to security - everyone can try to get inside, and if you forget to update our CMS or some user have a weak password, it can be someone outside of our team. WordPress, Drupal, CraftCMS, or Ghost are perfect examples of such CMSs.

Wordpress.com and wordpress.org are the two I'm most familiar with and they have plugins that do things like inventory management. You have to pay for all of this, but that is the cost of having everything be so easy. You will spend vastly more time and money trying to recreate those features and integrate them into wordpress.

Files that are stored on the server's file system. This will include the current version of the WordPress software itself, alongside any themes and plugins that you have installed. The vast majority of this stuff will already be in source code control (for example WordPress) so you might be better off just storing a list of the version numbers that you're using and finding a way to build a deployment by pulling software from the existing repos. You'll also need to deal with the fact that there's a config file that contains database connection details that shouldn't be stored on GitHub.
