You could also use tdarr to automate transcoding as soon as stuff enters your library so that it’s direct playable when you decide to watch it, but I’ve never needed to try it

Have a look at Tdarr for distributed transcoding. I have it on a few nodes and it’s been pretty easy on the network.

No, MakeMKV will only rip the disc as-is. HandBrake is a solid option, and ffmpeg works too if you're okay with getting into nitty-gritty command line options. Tdarr is a newer option that's great if you're looking to bulk-convert a bunch of files automatically based on various conditions. I haven't used it personally, but I've heard good things.

Why I use Jellyfin for my home media library
Typically because you are trying to play media with codecs that aren't supported by your browser, and transcoding is either not working or working suboptimally. Native clients (like MPV, VLC, or the desktop app) tend to have better codec support and support decoding the native media stream directly.
Some people work around this by making sure they only store supported codecs, either by being selective with media or offline transcoding (which can be instrumented with software like https://github.com/HaveAGitGat/Tdarr).

Convenient way to enter a lot (100s of episodes) of TV metadata?
Another option would be to use the Plex-Meta-Manager to have a "recipe" to then inject metadata directly into Plex. How specifically that works with text-based metadata I can't really tell you, I mainly used it for Posters and Collections.

Best programs to use alongside Plex?
Plex Meta Manager (GitHub) for some automated library organization. This one has been a long process. It's a steep learning curve when you're first starting out, but my suggestion is to pick ONE feature and start there. That is, "I want a collection of the IMDb Top 250 Movies" and learn how to implement that, then move on to another feature you want to add. Currently, I have overlays for streaming services, audio quality, and video quality, plus collections for IMDb, award winners, filmmakers, actors, and production companies.

What to use with Docker?
I guess most people already recommended plex wrapperr, tautulli, and plex-meta-manager. If you want to host your own budget software, there is firefly iii. Calibre with calibre-web is nice for organizing e-books, imo. I also like OpenProject for organizing projects, like stuff from work or renovating a room.
