I'm fine with the basics of Plex - now what can I do to really use plex to it's full potential?
With Tautulli you have a better monitoring system than what Plex offers. Streaming history split by user, you can add notifications to a lot of services like Slack, email and so on. You can even create newsletters being sent out to users based on what was added to your server.

My Overkill Home Network – Complete Details 2023
> How hard is this to configure?
Not at all. Just ensure that you have WoL enabled on the host machine and than proceed to send a magic packet. You could even do this with Home Assistant [1] if you are into that. I did this with a script that used tcpdump to monitor for incoming traffic [2] for Plex with an additional (dummy) Plex server on the Pi. I also remember faintly that I had to add 1 library and 1 video file to make this work though.
Powering down - or sleep - is a bit harder. I built a 'Sleep on LAN' app [3] for myself years ago that could power down (or sleep) a system on demand using a REST API. I used this and Tautulli [3] with Home Assistant that would check if there were any active streams and if there wasn't any activity for a specified amount of time I would send a SoL request to my service.
As you can see it isn't super hard or complicated, but a bit cumbersome to find all the moving bits and make it work. But when it does, it's IMHO fantastic.

Can I copy the metadata from one show to another?
In that case then I don't think there will be an easy way to transfer the metadata unfortunately (outside of some user-created script). One option that would at least help with the manual re-entry would be to use Tautulli's export feature or WebTools-NG's ExportTools to create a spreadsheet that has all the information in one place, and should be easier to copy/paste.

Plex GPU transcoding on unRaid
Also, take a look at Tautulli, tautulli.com. Its dashboard has more info than Plex. It shows transcode speed (1.0 = real time) and if subtitles are burning/transcoding/etc.

Best programs to use alongside Plex?
Tautulli for monitoring and notifications, plus some scripts for "maintenance," such as killing 4K transcodes and stopping remote streams after they've been paused for X minutes. These are from the JBOPS repository.

Plex health check
Tautulli. There's a feature where you can trigger notifications from events on your server, not just when it's down. I'm not sure there's a function to get your server to auto restart though.

Why is it transcoding to SDR ?
Looks like Tautulli's mobile companion app.

Import Spreadsheet of Metadata
The data Tautulli exports is great if you want to throw it in Excel to analyze your library, or as a backup of all the content you have on your server, but isn't really meant to be imported at a later date (the exporter guide. You should instead follow the Move an Install to Another System guide to move your server data to a new machine.

API?
PS : I know that there is alternatives PlexTraktSync data I did not got running because Docks would not work properly (Windows environment), Plex Scrobbler that demands VIP and PASS, this might be a solution but im not paying just to try it out, Plex-Trakt-Scrobbler that is a old plugin since 2018, there is no longer any support for plugins, it might be able to install it anyway but it may not work properly.

Plex and Trakt?
I am thinking about switching from Kodi to Plex(local) and are about to setup a test environment with Plex. To merge watched flag I need Plex to integrate with Trakt but so far I have only found Plex-Trakt-Scrobbler that seems to require both Plex pass and Trakt VIP(). Is there another about as good way to solve this?

Plex Trakt Scrobbler from UAS not syncing shows with Trakt
Judging by the Project Page the last commit was made in 2020 with 189 Issues being open as well as an issue that seems to be what you describe here
- No "open plugins folder" option on right-click in Plex
- [Plex] Plex-Trakt-Sync ou Plex-Trakt-Scrobbler
-
Hound - Self hosted solution for tracking tv shows, movies, games, etc.
I use this plugin to make it work without Plex pass... I didn't even know that Plex pass gives you sync to trakt lol.

Trakt scrobbling issues following credit detection?
Is anyone else having issues with trakt scrobbling following the credit detection update? I've been using this version on my Synology server and it seems to sporadically work. Some episodes will be scrobbled but others wont. However if I check trakt while watching, playback progress is always syncing correctly. So for whatever reason the scrobbler will be working but when I'm done with an episode there's a 25% chance an episode will actually be tracked. My theory is the credit detection pushes me to jump to the next episode before getting to the point in which the program considers a show as watched/syncs it to trakt.

Export library to Trakt or alternative for recommendations?
I'm running into issues with finding new recommendations that aren't already in my library, so I figure uploading my "collection" to Trakt is a good move. Unfortunately, I'm having some trouble there. I downloaded Plex-Trakt-Scrobbler (https://github.com/trakt/Plex-Trakt-Scrobbler/ is the link) and while it will let me know if I'm currently streaming something, it doesn't seem to want to copy my collection details over. I have tried messing with some configuration options and re-authenticating but still no luck.

trakt.tv plugin without plex pass
Actually it looks like rg9400 fixes were already merged to the official master branch in 2020, and Cornishman 2021 fixes were dedicated to later issues with those new agents (described here in details: https://github.com/trakt/Plex-Trakt-Scrobbler/issues/596)

Plex/Trackt.tv syncing collection
I'm using the Plex-Trakt-Scrobbler plugin. Everything is pretty much working flawlessly except for syncing my collection which was already in plex when I added the plugin, new added shows/movies are however synced.
What are some alternatives?
discord-rich-presence-plex - Displays your Plex status on Discord using Rich Presence
PlexTraktSync - A python script that syncs the movies, shows and ratings between trakt and Plex (without needing a PlexPass or Trakt VIP subscription)
Ombi - Want a Movie or TV Show on Plex/Emby/Jellyfin? Use Ombi!
Kitana - A responsive Plex plugin web frontend
overseerr - Request management and media discovery tool for the Plex ecosystem
Plex-Auto-Collections - Python 3 script to automatically update Plex collections based off a configuration file
Plex-scripts - Plex, the arr's and tautulli scripts coming from user requests
Jellyfin - The Free Software Media System
Varken - Standalone application to aggregate data from the Plex ecosystem into InfluxDB using Grafana as a frontend
Tdarr - Tdarr - Distributed transcode automation using FFmpeg/HandBrake + Audio/Video library analytics + video health checking (Windows, macOS, Linux & Docker)
PlexKodiConnect - Plex integration in Kodi done right
