Here is a link to a script that uses the Jellyfin API to migrate users and watched status from one instance of Jellyfin to another. It was linked to in the migration steps of the Jellyfin documentation. Hope this helps!

I remember this tool, hasn't been updated in over a year and I doubt it still works.

You can use https://github.com/CobayeGunther/Emby2Jelly. I've used it to copy over watch data between two servers a few different times. If you go that route you still need to set up other config settings manually, plus the new server needs to have all of your libraries fully scanned and all of the metadata imported.
