Have I got the software for you! Shinobi is the solution! Simple setup! Ninja easy! Sexy interface? Check. Easy setup? Yep. More than 4 camera streams at once? You got it. Person/Motion/Object detection? Yes, with the caveat that you really should use a GPU for it. PTZ? Uh-huh!

Best Wireless 24/7 recording with no subscription cost?
If you're good with computers, I've used Shinobi and ZoneMinder before, but right now I'm using Frigate which has been really good so far. It can do 24/7 recording, as well as AI-based object recognition, and integrates seamlessly with Home Assistant, but it requires a bit of technical knowledge to set up and a computer you can leave on 24/7

Newbie in Home Automation - Please help
That Dream Machine thing looks super awesome; but for cameras, I think it's massively overkill and a waste of money. I'd go with a cheap switch (just make sure it's gigabit) and set up a Blue Iris or Blue Cherry server on a NAS or NUC or something. I do tend to make quite techy-DIY choices though - I'm sure there are options with less faff.
What are some alternatives?
