About Linus' WAN show notes about backups and losing data: I think there does exists something that he describes that fits the bill
There is also Retroshare which is a "friend-only network" so you only connect to nodes of people you implicitly trust e.g. your friends (instead of everyone in the world like with e.g. Bittorrent). It is also encypted in-transit but I am not sure if it is encrypted on-rest.

I have an anonymous online friend. How can we ensure that even if we lose access to our current chat platform we will be able to find each other, while still maintaining our anonymity?

You already can, apart from some DHT and bootstrapping stuff.
I tried to like Jami, but it never worked right when I tried it. I didn't find a decent Android Tox client with video call, but it should work alright for text.
