Alternative to the "Google" app (news)?
You can use Read You if you want complete freedom, as long as you're willing to curate RSS subscriptions. Otherwise, Pocket by Firefox browser or Brave news in the Brave browser fit your description, but they do include ads

Safely opening up FreshRSS Server
I'm running FreshRSS behind Caddy and Cloudflare Tunnels without any issues. For reading I use ReadYou connected through the Fever API

I use Feedbro on the laptop and Readyou on the android phone. Readyou is posh.

Github Apps Updater?
There are apps like Obtainium and UpgradeAll for this but they are essentially doing what I mentioned above and has limitations compared to app stores so I usually just use my feed reader app ReadYou.
