Beginner's Guide to Mods
Project Infinity (PI): Project Infinity is a new tool from AL|EN, one of the BWS contributors, and worth a look. Its goal is to provide the same level of functionality as BWS without the unmaintainable aspects of the project, e.g. it gives optional tools for modders to provide install order information, or you can use community-derived install orders. You can get started with the PI documentation or this tutorial video from morpheus562. PI is still in development.

Bioware-like games?
Bear in mind this is just a small slice - there's a huge amount of stuff out there, the majority of which is EE-compatible. I will say that getting everything working can be a pain in the ass - I use Project Infinity for improved compatibility and installation, which is way easier than doing it manually. But I hope this is helpful, and if you have any questions just ask :)

Hyped for bg3, thought I would try the first one. Any tips for an absolute noob? I've never played any game like bg1 besides fallout one and I didn't get very far. Any help is greatly appreciated!
there are some really good mods you can use https://github.com/EE-Mod-Setup/EE-Mod-Setup to set them up easier. you don't need them for a first run through or anything but some like the NPC banter packs might be nice to have

Project Infinity is unusable.
You can use https://github.com/EE-Mod-Setup/EE-Mod-Setup instead.

problems with Mod order and mod conflicts
You don't need biffing for EE. You can use a mod manager https://github.com/EE-Mod-Setup/EE-Mod-Setup. It's EET for EE games, not BGT.

Mods for Baldur's Gate 2 Enhanced edition
https://baldursextendedworld.com/Install-Tool/ is a mod installer with quite an extensive collection of mods integrated.
What are some alternatives?
Tweaks-Anthology - The Tweaks Anthology is a WeiDU compilation of nearly 200 components of cosmetic changes, house rules, and other tweaks. Some of these were fan requests, others are needed changes, and others simply make dealing with the more irritating aspects of the game engine easier. Each component can be installed separately so the player can pick and choose only which ones they wish to install.
EET - Baldur's Gate: Enhanced Edition Trilogy (EET) is a modification for Baldur's Gate II: Enhanced Edition that merges whole saga into one game and provides continuity between the events of Baldur's Gate, Tales of the Sword Coast, Shadows of Amn, Throne of Bhaal and Siege of Dragonspear expansion (also for both Black Pits adventures). The name of this this modification probably rings a bell to those who have been following IE modding scene, thanks to the classic mod that inspired this project, called Baldur's Gate Trilogy (BGT), developed by Bardez and Ascension64. While EET remains mostly faithful to the premise of the BGT, it shouldn't be considered a direct continuation of that project. In fact both mods share little to no common code and took different design decisions in many aspects.
SwordCoastStratagems - Sword Coast Stratagems (SCS) adds over 130 optional components to Baldur's Gate: Enhanced Edition, Baldur's Gate II: Enhanced Edition, Baldur's Gate II: Throne of Bhaal, Baldur's Gate Trilogy, mostly focused around improving monster AI and encounter difficulties, but also including cosmetic and ease-of-use components, tweaks to abilities or spells.
LeUI - lefreut's Enhanced UI for BG1EE, SoD, BG2EE and EET
Solaufein - Weimer's classic mod changes Solaufein into a joinable NPC for BG2EE and ToB. Revised EE version.
