I was looking for a tool to record lecture notes via a graphics tablet on a mac. Came across Rnote which exactly does that amongst other things like document annotation and sketching. I used xournalpp and really liked it at the time. Since then, I heard good things about rnote.

I like Rnote and Xournal++. Not sure if they fit your needs, though. I always use them with a digitizer, but you can also write text with the keyboard.
