You also seem to be using an older version of OpenCore, so updating that would be a good idea if you get the GPU issue sorted.

Booting Windows error: OCB: StartImage failed - Already started - what to do under BlessOverride?
This is due to OpenCore getting confused when trying to boot Windows and accidentally thinking it's booting OpenCore. This can be avoided by either move Windows to it's own drive or adding a custom drive path under BlessOverride. See Configuration.pdf (opens new window)for more details.

Does OpenCore 6.9 support macOS Monterey?
Another alternative if you like command line utils would be using OC-tool, drop your old config in the INPUT folder, place your custom ACPI patches and kexts in EXTRAS and use that. It has a nice TUI to sort out the config and get things going in a proper way.

OpenCore 0.71 is Out!
I use https://github.com/rusty-bits/OC-tool since 5.x. Very easy to use in the terminal. Just RTFM and upgrades will be a breeze. You can also try out the latest builds long before the official release is published.

When you have a working config take a look at https://github.com/rusty-bits/OC-tool I've been updating and editing with this tool for long simple instructions works great.
- For those interested, finally got around to updating OC-tool for OpenCore 0.6.8 (only a day late) (remember: this is not an official tool, you still need to correctly make your config.plist for OC-tool to build a working EFI folder from it)
