Plex won't use hardware transcoding (Ubuntu)
I know you said in another comment that you weren't interested in Docker, but I have found Docker + Portainer to be an easy way to handle my Plex server along with an *Arr stack to support it. I was able to use templates to do most of the heavy lifting, especially at first. Here's a huge repository of them: https://qballjos.github.io/portainer_templates/

MBP or Mac mini
Otherwise, if you need a server that can do a lot of transcoding, you can pick up an Intel NUC 11 with an i5 that should be able to handle multiple 4K hardware transcodes (PlexPass required). If you just need to direct play stuff and transcode occasionally, a Beelink U59 mini pc will handle Plex and a bunch of other media server-related Docker services for a third of the price of a Mac mini.

Is it wise to buy a pre-built desktop PC and use it as a plex server?
Otherwise, now would be a good time to introduce yourself to Linux, which many of us use for our servers. I run my Plex directly on Ubuntu, but everything else is run through Docker using Portainer templates. I have a Beelink Mini S mini pc with a 5-bay USB 3.1 drive enclosure (non hardware raid version).
