Latest version on Debian stable with updates
That depends on the debian stable repo what version of Neovim they provide. My suggestion would be to check out bob, which as far as I'm concerned it's the easiest way of installing Neovim and gives you the ability to switch between stable and nightly.

I personally use bob, ($ cargo install bob-nvim), and it's been great for ease of version management, including nightly

current stable is 0.8.3 maybe try the unstable ppa or appimage or bob.nvim

🎥 Neovim Config Switcher
If you want to peek at it now, you could try a neovim version manager like bob... https://github.com/MordechaiHadad/bob I've been using it recently and it makes experimenting with new stuff a bit easier. Then if you run into issues you can switch back to a stable release. I'm considering doing a video on this too since I think it would be helpful to some... and I don't think it's very well known

I love vim but I don't want it as a hobby
Personally I have both the previous and latest stables installed (mostly for testing plugin contributions), as well as a script that builds nightly . If you didn't know, they include prebuilt assets on the releases page, or you can use bob, in case your distro falls behind.

Annoucning Bob v2.1.0
The big advantage of asdf is that you only have to learn one CLI and then you get a version manager for every plugin asdf supports (and there are a lot). asdf supports version files and asdf-neovim supports installing by git ref/nightly tag so I'm pretty sure everything you listed is already there for asdf users.

Any ergonomic way to browse highlight groups?
You don't need to do the "nightly" dance. It should all work with the latest version of NVIM. I'm using NVIM v0.7.2. I think Nightly is at 8.0. I installed NVIM with homebrew years ago, and I run `brew upgrade` every month or so to keep things up to date. But if I wanted to run Nightly I'd use ASDF to manage switching between versions effortlessly. https://github.com/richin13/asdf-neovim.

I haven't tried it for neovim, but I use asdf for managing versions of node and python, and there's a neovim plugin available
