Suggestions for self-ish hosted game server
For some servers you could use https://linuxgsm.com/ . But from your 3 currently running servers only Project Zomboid is supported.

How to start/stop Foundry via website on self hosted server
That said, it sounds like what you want is a GSP to manage 'game' servers. Something like Pterodactyl or LinuxGSM (CLI-only by the looks of it). These will have a way to launch shell scripts or even docker containers in regards to Pterodactyl.

Possible to host Server on Mac while playing on Xbox?
You should be technically able to run the server in a docker container (e.g. lloesche/valheim-server, Github page). No idea if the resources of the VM are enough for the server, but as it does not run a lot of game logic it might work.

Where is the Graphics Processing Done?
FWIW, I'd recommend running the Valheim Server in Docker (https://github.com/lloesche/valheim-server-docker) if you're somewhat unfamiliar with Ubuntu/Linux. While you may have to get to grips with the basics of Docker, it's much simpler than getting wrapped up in library dependencies and other Linux rabbit-holes. It's also much simpler updating and managing the server. As for getting the existing world onto the dedicated server, FTP is an option. The simpler option, which doesn't involve setting up an FTP server) is to use WinSCP or PuTTY and "scp" the files over. "scp" just runs over SSH, which is already up and running on your Ubuntu server.
It's really simple. Just follow through the official install guide here: https://docs.docker.com/engine/install/ubuntu/#install-using-the-repository Most containers can just be launched by a docker run command that is supplied with the container. Of course, there's more complexity as you go, but familiarize yourself with the concept of volumes, and port forwarding, and that'll cover 95% of use cases for just running applications. The README of the docker container has a nice little overview that's worth your time reading over.
