How safe are alternative Discord apps like Aliucord, CutTheCord for Android or Lightcord for desktop? Do they respect your privacy more than the official apps?
Slightly off topic but a warning for Lightcord, it seems like it has been abandoned.

I suggest trying out lightcord which among other improvements like better discord it also lets you start discord without those sort of updates.

Discord client crates - full clients?
Yes, there is also stuff like Lightcord and BetterDiscord (A modification of the default client, also against TOS). I suspect the standalone clients like ripcord have reverse engineered undocumented APIs (that are required for a full client) from network traffic but I really cant say for certain.

Using Discord without giving away too much data?
Right now I'm personally using Lightcord, and I found it much more better and private. But it's not a panacea.

someone used https://github.com/Flam3rboy/discord-bot-client to log in as a discord bot check your audit logs for username#0000 added botname#000 to the server to find out who added them 90% of the tim whoever added the bot is the person behind the random talking bot
