Both Apache OpenOffice and LibreOffice are descendents of the original OpenOffice (what you're probably thinking about.)
LibreOffice is under very active development and can be downloaded from https://www.libreoffice.org/
Apache OpenOffice is effectively abandonware at this point, see https://wiki.openoffice.org/wiki/Product_Release It's mostly been maintenance releases since 2013.
If you want LibreOffice with support (or just want to support development), you probably want Collabora.

Alternative to microsoft office word
Another recommendation for LibreOffice. I've been using it on both macOS and Windows for over a decade. I had used the original OpenOffice and switched to LibreOffice when it was forked off.

You make a good argument, I've made a new version with the change you suggested. There now are 8 spots for Backgrounds. I've only put it in the Excel version, since thanks to the amazing suggestion of @UnitGhidorah, https://www.libreoffice.org/ is an much better free alternative to Google.

Software for organizing board game nights?
You should be able to do this with nextcloud Office: https://nextcloud.com/collaboraonline/ It’s basically like google docs, so med students should be pretty familiar with the look and feel.

Live Guest Document Sharing
Sorry I don't have an answer, but I'm curious how you installed nextcloud office 5? I've tried to research this on several occasions and from what I've read it sounded like "nextcloud office" is just collabora online but rebranded somehow, and I couldn't find instructions on how to install anything other than collabora. The nextcloud/office repo has a link named "Nextcloud office" in the readme that directs to nextcloud/richdocuments repo, where the readme describes it as an app to integrate collabora online, and the about describes it as "collabora online for nextcloud" with a link to nextcloud.com/collaboraonline

I solved it. It turns out https://nextcloud.com/collaboraonline/ left an outdated guide for nginx reverse proxy as they changed lool to cool (see my post i have updated it with solved link)

Are there better alternatives to Google Documents?
I chose to self-host for "free" with NextCloud. Getting it all up and running and accessible requires some involved technical setup, but it is great UX and private and well-documented and supported. It includes a live multi-user editor as part of the Files app, but it is a bare-bones markdown notepad. For heavier multi-user editing, I've had great results after adding Collabora.

Working with Linux in a Microsoft/Google-dominated environment
I use the CODE Server which is currently broken (https://github.com/nextcloud/richdocuments/issues/1282) for all users, the best solution would be using a different server for the document server or running it in a container, I haven't had time to do this lol
