Recommendations for a safe key mapping app?
Key Mapper itself is FLOSS (Free/Libre open-source software), the source code is here. Another possibility is Volta, but Key Mapper is better.

Termux on Android 5 or 6
Do you mean with a BT keyboard attached to the tablet? One approach is to use keymapper:
market: https://play.google.com/store/apps/details?id=io.github.sds1...
github: https://github.com/keymapperorg/KeyMapper
fdroid: https://f-droid.org/packages/io.github.sds100.keymapper/
It's a very versatile tool, can be handy even if you don't have a keyboard.

Is there any way to detect fake or simulated touches/gestures/clicks?
You'll have to see where the service capabilities are listed. This'll be xml folder here -> https://github.com/keymapperorg/KeyMapper/blob/master/app/src/main/res/xml/config_accessibility_service.xml

Making a Samsung phone useful with Universal Android Debloater
I never got much out of Easer, but I did come across Key Mapper, which lets you assign actions to button presses. I set up a mapping so that a double-click on volume down will activate the flashlight. Not quite as cool, but it's a pretty decent alternative.

Emacs on ipad
I've always been using phones that have hardware keyboards though. Most of them don't have dedicated Ctrl or Meta/Esc keys so I map other physical keys to those. Keymapper is a handy tool to get the most out of physical buttons/keys.
