I use onlyoffice[0] because MS Office doesn't run on Linux. It is open source and seems to have the best compatibility with MS Office. You can self host it and/or use it locally. It also integrates with e.g. nextcloud or seafile.
Some features are missing yes, but the usability (IMO) is better than Libre-/OpenOffice.
I don't know how good the collaboration is but they seem to advertise for it.

Yes, they don't even have to reinvent online office. They could use something like https://www.onlyoffice.com/ which is open source and can be implemented in a browser.

if you move a Google Sheet or Doc from Google Drive to another disk on a computer, the sheet/doc is deleted from Drive and the .gsheet or .gdoc stored locally is useless.
There's OnlyOffice though I can't vouch for its quality as a multi-user docs / sheets replacement; I've only used it offline.

Is there any tool to verify client-side website code you get served is the same as the open source version?
There are lots of useful End to end encrypted webapps such as Protonmail, cryptpad, cryptee and many others. And part of why we trust them is that the client side code is open source, so we can see that end to end encryption is really going on and is really secure. Its impossible to verify what code they are running in their server, but if the data we send them is already encrypted we can rest easy.

There is numerous important parameters on our Nginx configuration file that you shouldn't miss. Like caching, CORS & other headers. Without them CryptPad can't work securely.
