how the hell do you do this
Nah, that's just a normal status. The image shows a custom "rich presence" status, which is normally used to display extra information for games (eg, what map you're on, gamemade, etc) or for Spotify, but you can have it show various things, including those buttons. After a quick google, this or this could work.

How safe are alternative Discord apps like Aliucord, CutTheCord for Android or Lightcord for desktop? Do they respect your privacy more than the official apps?
Slightly off topic but a warning for Lightcord, it seems like it has been abandoned.

I suggest trying out lightcord which among other improvements like better discord it also lets you start discord without those sort of updates.

Discord client crates - full clients?
Yes, there is also stuff like Lightcord and BetterDiscord (A modification of the default client, also against TOS). I suspect the standalone clients like ripcord have reverse engineered undocumented APIs (that are required for a full client) from network traffic but I really cant say for certain.

Using Discord without giving away too much data?
Right now I'm personally using Lightcord, and I found it much more better and private. But it's not a panacea.
What are some alternatives?
