Modding to allow or improve mixed input
The same criteria as above also apply here, I.E. was this a change the devs made in the game or did they update something in the engine. Knowing what versions had working mixed input would be highly helpful. Both for figuring that out and fixing the issue, if it's fixable. You can download old versions of Steam games with Depot Downloader. That would allow for comparison with the current version. Which wouldn't be of much help in finding the change, but it would be useful for fixing it once found.

Please help a Linux novice install older versions of vanilla Proton on Steam Deck
This is a good idea and I was hopeful it would work, but when I tried it on my PC (using DepotDownloader, which I have a fair bit of experience with), it just returns an error message saying the manifest couldn't be downloaded. I tried a few other manifest IDs from the Proton 7 SteamDB page but they all returned the same error.

I extracted models for a little project!
Eventually I found unp4k (Github). This allows you to extract the big 'data.p4k' file. Then you have access to all the model files, though they're in .cgf and .cga formats (cryengine). Just opening these in cryengine wouldn't work. After some research I stumbled upon Cry Engine Converter (Github). This allows you to convert those files into usable files. This was huge for me.

Work in progress - New World model explorer
I think the animation data is accessible. Especially since New World is built using Amazon's Lumberyard game engine, which is open source. Looking through the source of Cryengine-Converter (tool to convert Lumberyard/Cryengine proprietary data formats to open formats), it seems to me that it also supports converting .cga (Crytek Geometry Animation) files!
Models are Cryengine .cgf and .skin files. You can use Markemp/Cryengine-Converter to convert them to Collada (.dae) files, and potentially KhronosGroup/COLLADA2GLTF to convert the Collada files to glTF files afterwards.
What are some alternatives?
