Is there a way to remove metadata from an image file?
Code is here if you're interested: https://github.com/Webreaper/Damselfly/blob/master/Damselfly.Core/Services/ExifService.cs - although this may be overcomplicated for OP's needs, and just a Process Launch is all you really need.

What's a software you searched to selfhost but is still missing to you ?
It's pretty easy to implement. I've done it in my app. You just wire up a hook to the OS "file/folder changed" event, and whenever that happens you trigger a rescan of the affected files. My app also uses last-mod date to check at startup in case any files changed while the app wasn't running.
Sorry, in a few threads this morning and thought I'd linked it here. It's Damselfly

Do I need Windows if I am learning C# 10 and .NET 6?
+1. Professional dev who works on Windows at work, but also uses Rider on Linux. In my spare time I also develop an FOSS (here) app which was built entirely using VS for Mac (I don't have any windows hardware at home at all). Basically, the tl;Dr these days is you don't need windows for dotnet, just pick the OS you prefer.

Can anyone recommend a web-based Image viewer/gallery? I'm generating a LOT of images on my server with AUTOMATIC1111
If you run docker there are several programs to try here: https://github.com/tborychowski/self-hosted-cookbook/blob/master/apps/photos/comparison.md

Whatβs your favorite note taking app, foss or selfhosted?
I've added notea to my cookbook just now. The process is not too complex, once you figure the kinks! :-)

Are you interested in a freely available wiki about self-hosting?
Why is it so light on content? Its not that people are not sharing info or anything: https://github.com/tborychowski/self-hosted-cookbook

My docker network is already complete, but I'm considering adding traefik. Is there a simple way to retroactively apply it to around 30 existing dockers?
That's not true. Routers and services are part of traefik dynamic config. I don't use labels as they make a mess in docker compose files. I only use config files and it's all dynamic. e.g. https://github.com/tborychowski/self-hosted-cookbook/blob/master/apps/reverse-proxy-sso/traefik.md
